Are you cooking this year??

Are you planning an Easter dinner? If so, what will you have. Will you have guests for dinner? Family or friends? We are having ham. I bought one several months ago on sale. It's one of those spiral sliced hams. We have invited some friends of ours to dine with us. I am debating on what to serve with our ham. Should I make scalloped potatoes, or macaroni and cheese? Or Deluxe potato casserole? Then what veggie should I serve and how about salad. I think a nice spring salad would be nice. I won't be dying any eggs this year since I don't have any little munchkins around to enjoy them. Maybe a light dessert so calories aren't an issue.

Our church has a wonderful Easter program planned. It's called Friends Day. We are all encouraged to invite a friend who isn't already attending a church to our church for the service. During the service we all have been encouraged to participate in a program that will be video taped (by my Hubby) called Cardboard Testimonies. The idea is to show the visiting guests and others your life before Christ and after Christ. Lord knows I am not perfect and there is probably plenty for me to write but so far I haven't come up with any. It promises to be a very motivating service. We tried it at Christmas and it was a huge success.

I'm so used to cooking for a crowd, on holidays (we would have as many as 50 - with family members and a few close friends), that I don't know what to do with just 4 of us! I need to get over the "I wish things were the way they used to be" thinking, and try to enjoy "the way it is"!

Maybe I'll take your lead, and go look for a spiral sliced ham.

If you come up with a great low cal dessert...let me know!

We are having ham too. And scallopped potatoes. They just go together. I am still planning the other menu items.

Our easter menu is spiral ham like yours. Green bean casserole, mashed potatoes, deviled eggs, hot rolls. Sweet iced tea and birthday cake for dessert. DH birthday is this weekend.
PT helped some last time, but the 1st time it about killed me.
I am giving it a couple more weeks.

We had ham. It seems to be a favorite of people for Easter. Makes me curious as to why? Potato salad has to go with ham in my books. It seems they are made for each other. Strawberry shortcake is always my favorite dessert at this time of year and it's light too. Enjoy your special festivities. 'On Ya'-ma

We're heading to the farmers market this morning and I have my fingers crossed that the "spiral ham man" will be there!
Southern-style spial ham made by an American, right here in Oz!

Ham, scalloped potatoes, collards, deviled eggs and birthday cake, as the Old Guy's birthday is Monday...

Old Guy and my dad shared the same birthday (April 13th) so since dad died, it's kind of a bitter-sweet day, you know?

My hubby has to work that day until 2:30. We haven't really decided what we are going to eat. We thought about a ham but I am not a big ham person. We bought a lamb cake to surprise our daughter with. We have just been so busy with going to the hospital for all the tests for hubby and we have to leave tomorrow morning at 6am for his last test. I love the idea with your church. I miss going to church. When we moved here 4 1/2 years ago I never really found a church. I hope you and your family has a wonderful Easter. Hugs

Hi Kathy,

Whatever you choose will be fine. I wish I could fly out and be with you and your hubby. My Hubby's family are big fighters. No one ever gets along and therefore some are not invited to Easter brunch. We stopped having it. I can't stand it!! I was thinking of making a turkey...what are your thoughts???

Hey...well scalloped potatoes sound good and a layered salad using spring mix. (I use a combo of reg iceburg and spring mix) and it makes 2 layered salads - one for the guests and then one for the next day for us (lol). Layer with the lettuce, celery, frozen peas that you have rinsed and drained, a layer of mayo, sprinkle sugar on the mayo, bacon bits layer (use the real ones), and then shredded cheddar, and then parmesan cheese. It's a big hit here! Hope the party goes well. We are goofing off today running errands, taking dog for trim, swapping winter summer clothes. Tomorrow we are going to Mom's and then Sunday we will be going to a church closer to us and hoping we can get involved with that church. Not sure what our Easter meal will be - perhaps corned beef and cabbage?

I've seen this cardboard testimonies and it is so moving. I am cooking dinner and looking forward to having my family over. My mother normally does the cooking, but she doesn't feel up to it this year. I have always wanted to have Easter dinner at my house so I was happy to do it. We are having ham, veggie casserole, green beens, mashed potatos, oriental salad, stuffing, deviled eggs, orangecello cake, and berry pie. What a feast! I hope you have a wonderful day with your friends and that they enjoy attending service at your church.

My daughters are coming home from college. I'm doing something really simple, so that I'm not distracted by the cooking, a cranberry bourbon glazed ham, potato salad and baked beans. Store bought cupcakes for dessert.
