Morning Drizzle
I'm sitting here enjoying a cup of coffee and the quiet in the house. Hubby is still sleeping and the cat is quiet for the moment. She has started being very vocal to the point that we have to tell her to shut up at times. Chloe is laying up against my leg as I sit in the recliner with my feet up. All I can hear is the hum of the refrigerator right now. Ah, peace and quiet. It is supposed to rain today and was drizzling a little while ago. I so enjoyed the sun we had the last two days. So I can't really complain about the rain we'll get today. I noticed that I have about 20 crocus plants blooming under the new deck we had built last year. I transplanted the tulips that were under there but didn't think about the crocuses. I looks funny to see them struggling to find light from under that big structure.
Today we'll be having a get together with our church group and we are hosting it. We will be serving tri-tip roasts and hubby will be barbecuing them. Everyone will bring the rest of the meal pot luck style. Most of you may not know what a tri-tip is. I know when we've traveled to other states the stores don't have them and the butchers don't always know what part of the cow they are. I forgot myself but I just Googled it and it's from the bottom of the sirloin. It's very tender and there is only one on each side of beef. We are cooking 5 of them today. Well I guess it's time to get moving, the cat has started her song again...............

I was just checking out the pictures I took from our trip and saw these boots. I thought of Judi when I saw them. There is a store in Carmel, CA that is full of all these handcrafted boots. I haven't made time for posting on here lately. I don't know why, maybe I just can't think of anything to say. I have been reading the blogs I follow and sometimes when I read other blogs and see how talented and clever people are it makes me not want to post. I would hate to bore people to death. I haven't lost any more weight since my band adjustment. I am able to eat a bit more, but that isn't the problem. I have been eating stuff I shouldn't. I think I needed to just vent a little in my eating, since I was so restricted for so long. I have continued to workout at the gym so I haven't gained any weight. I am still tight in the morning so I don't eat breakfast, which I've always read is very important so I always ate it. But when you can't, you can't. I did drink a protein shake the other day and that went down ok. I think I am back on track now. Just had to get that out of my system so hopefully I will not continue to eat bad stuff and sabotage my weight loss. I did go to lunch yesterday with hubby at a place we hadn't gone to in probably 4 months or more. The lady who took our order said to me, "do you mind my asking how much weight you've lost?" She said she had been watching me lose weight since we started going there and told me how good I looked. That was a great incentive to behave myself. No more Hershey's kisses for me.
Yesterday was such a pretty day here. The sun was out all day and it was in the high 60s. Come on Spring...........

Unexpected dinner guests

Ingredients
4 teaspoons olive oil
1 medium onion, coarsely chopped
1 pound ground beef
Salt and freshly ground black pepper
14 (8-ounce package) manicotti
1 (15-ounce) container whole-milk ricotta
3 cups shredded mozzarella
1 cup grated Parmesan
2 tablespoons chopped fresh Italian parsley leaves
2 garlic cloves, minced
3 cups marinara sauce
2 tablespoons butter, cut into pieces
Directions
Heat a heavy medium skillet over medium heat. Add 1 teaspoon of the olive oil, onion and ground beef. Season with salt and pepper. Saute until the meat browns and the onion is translucent, about 5 minutes. Remove from the heat, and cool.
Brush 1 teaspoon of oil over a large baking sheet. Cook the manicotti in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 4 to 6 minutes. Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and cool.
Meanwhile, combine the ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup Parmesan, and parsley. Add the garlic, salt, and pepper to taste, and mix. Stir the cooled meat mixture into the cheese mixture.
Preheat the oven to 350 degrees F.
Brush the remaining 2 teaspoons of oil over a 13 by 9 by 2-inch glass baking dish. Spoon 1 1/2 cups of the marinara sauce over the bottom of the prepared dish. Fill the manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over.
Sprinkle the remaining 1 1/2 cups of mozzarella cheese, then the remaining 1/2 cup of Parmesan over the stuffed pasta. Dot entire dish with the butter pieces. Bake the manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30 to 35 minutes. Let the manicotti stand 5 minutes and serve.

The best things in Life aren't things
Another Monday is here. I can't believe how the weather has changed today. It was snowing for a while earlier and then it was raining and now it's sunny and beautiful. But it's very cold out. I just went out to fill one of the bird feeders and couldn't believe the chill in the air. I am so ready for spring and warmer days. Having grown up in sunny Southern California I truly miss the sunshine after 3 or 4 months of the gray, foggy winter season here in Oregon. But when the sun does come out it is so beautiful because of all the shades of green here. And green is my favorite color. It makes me appreciate the fact that I live here now even though we have months of ugly weather. It doesn't get bitter cold here or rain terribly hard. Mostly we have gentle rains and no wind. I think I dislike the foggy days the most. I guess I am just glad that I can escape from time to time and drive to a better climate and enjoy the sun.

No Rest for the Weary
I think if I ever get another pet I need to be shot. My sleep is so interrupted by these animals that sometimes it's a wonder I can function. Our dog had 2 bladder surgeries for bladder stones when she was younger and it left her with the inability to hold her water (so to speak) for more than a couple of hours. So I am usually sound asleep around 3:30 ish and she wakes me by shaking all over ( I am a very light sleeper). So I get up and take her out to do her business, then she has to get a small drink (very small) and then I have to go do my business and then I get back in bed. She usually wants in bed with me. So she comes to our bed and snuggles under the covers for a while. But usually only lasts about 15 minutes before she is suffocating under the blankets. Then she wants down off the bed. I have to lower her down. It's too high for her to jump without hurting herself. Finally she gets back in her bed and I lay there. I turn over and get comfortable. A couple of minutes later I readjust. Then I am thinking, hmmm did I pay that bill for Direct tv? Then another thought pops into my mind, before you know it an hour or more has passed and Chloe is sound asleep as is my hubby and I am wide awake. So I get up and turn on the computer. I take care of any bills that need to be paid and read up on my blogs that I follow and any email that's accumulated. I read various things I usually check on and finally after a couple of hours, I start to feel sleepy. So I recline my chair since now Chloe is beside me sleeping. I shut the light out and just start to fade away when Molly our oldest cat starts poking around behind me in the window and then she goes to the back door off the kitchen and starts meowing to go out (and she's an indoor cat). I yell at her to shut up and that does no good. I am in and out of fitful sleep for the next half hour and then I finally give up and turn on the tv. I start to watch the news and realize it is suddenly quiet in the house. I am the only one awake. I really need to go sleep in our motorhome on mornings like this so nobody disturbs me. Only it's so cold out there. There is something to be said for having no pets. But I love them, even though they drive me nuts sometimes.
